Truro School of Cookery Demonstration & Dining Experience

Truro School of Cookery Demonstration & Dining Experience

If you're staying with us this spring, take part in a weekend of cookery demonstrations and delicious dining experiences with the Truro School arm of the prestigious Leiths School of Food & Wine Academy.

This pop-up cookery event will take place in the rustic setting of our Crab Shack, as guest chef AJ Turner demos a three-course feast featuring a host of Bryher produce. You'll then dine on AJ's creations tasting all the island has to offer. The workshops are on offer across the 25th & 26th April 2020.

AJ is assistant head chef at Truro School of Cookery. A graduate from Leiths School of Food & Wine in London, AJ climbed the ladder at Rick Stein's Seafood Restaurant in Padstow where he received the 'Star of the Future' award, helped launch a new restaurant in Dorset and even tested recipes for new books.

During the sessions, AJ will pass on his culinary knowledge, and you'll leave armed with recipe cards to allow you to recreate the dishes at home.

The Menu

First up, you'll tuck into a taster of Salakee Duck Farm canapés, featuring island-reared duck from St. Mary's, accompanied by a Tarquin's Hell Bay gin & tonic. Then, onto a starter of asparagus, accompanied by a Bryher-landed crab, spinach and shellfish reduction.

Next, get messy with a decadent dish of whole Bryher lobster linguine, flavoured with herbs from Bryher's Veronica Farm.

Finish up with a special Bryher-inspired tiramisu - this one is flavoured with Veronica Farm's famous coffee and clotted cream fudge.

The above courses will be matched with delicious wines to fully complement the flavours.
